- ½ cup red lentils rinsed
- 1 small onion finely chopped
- 1 small carrot diced
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 tablespoon tomato paste
- ½ teaspoon cumin
- ½ teaspoon coriander
- ½ teaspoon paprika
- ¼ teaspoon turmeric
- 3 cups vegetable or chicken broth
- ½ teaspoon salt adjust to taste
- ¼ teaspoon black pepper
- Juice of ½ lemon
- Fresh basil or parsley for garnish
Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the onion, carrot, and garlic, cooking until softened and fragrant, about 5 minutes.
Add the spices and tomato paste: Stir in the tomato paste, cumin, coriander, paprika, and turmeric. Cook for another minute to release the flavors.
Simmer the soup: Pour in the broth and add the red lentils. Bring to a gentle simmer and let cook for 20-25 minutes, stirring occasionally.
Blend (optional): If you prefer a smooth soup, use an immersion blender to puree it. If you like a chunkier texture, leave it as is.
Finish with lemon juice: Remove from heat and stir in fresh lemon juice for a bright, fresh taste.
