Ingredients
  

  • ½ cup red lentils rinsed
  • 1 small onion finely chopped
  • 1 small carrot diced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon tomato paste
  • ½ teaspoon cumin
  • ½ teaspoon coriander
  • ½ teaspoon paprika
  • ¼ teaspoon turmeric
  • 3 cups vegetable or chicken broth
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper
  • Juice of ½ lemon
  • Fresh basil or parsley for garnish

Instructions
 

  • Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the onion, carrot, and garlic, cooking until softened and fragrant, about 5 minutes.
  • Add the spices and tomato paste: Stir in the tomato paste, cumin, coriander, paprika, and turmeric. Cook for another minute to release the flavors.
  • Simmer the soup: Pour in the broth and add the red lentils. Bring to a gentle simmer and let cook for 20-25 minutes, stirring occasionally.
  • Blend (optional): If you prefer a smooth soup, use an immersion blender to puree it. If you like a chunkier texture, leave it as is.
  • Finish with lemon juice: Remove from heat and stir in fresh lemon juice for a bright, fresh taste.
  • Serve and enjoy: Ladle into bowls, garnish with fresh herbs, and serve warm!
