Easy and Savoury Breakfast Sandwich

- 4 slices of sourdough or brioche bread
- 2 tablespoons butter
- 4 large eggs
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup cheddar cheese shredded
- 4 slices ham
- 1 tablespoon chopped parsley or chives
Prepare the eggs: In a bowl, whisk the eggs with salt and pepper. Heat a non-stick pan over low heat, melt a bit of butter, and pour in the eggs. Stir gently with a spatula, cooking until soft and fluffy. Remove from heat.
Butter the bread: Spread a thin layer of butter on one side of each slice of bread.
Assemble the sandwich: Place a slice of bread butter-side down in a pan over medium heat. Add a layer of cheese, followed by scrambled eggs, ham, and another layer of cheese. Top with the second slice of bread, butter-side up.
Cook until golden brown: Press down slightly with a spatula and cook for 2-3 minutes per side, until the bread is golden and crispy. Flip carefully and repeat on the other side.
Let it rest and serve: Remove from the pan and let the sandwich sit for a minute before cutting. Sprinkle with fresh parsley and enjoy!
