Easy and Satisfying Chicken Noodle Soup

- 1 large chicken breast or 2 small
- 4 cups low-sodium chicken broth
- 1 cup egg noodles
- 1 small onion diced
- 1 carrot peeled and chopped
- 1 celery stalk sliced
- 2 cloves garlic minced
- 1 tablespoon olive oil or butter
- 1 bay leaf
- ½ teaspoon salt adjust to taste
- ¼ teaspoon black pepper
- ½ teaspoon dried thyme or 1 teaspoon fresh
- 1 tablespoon fresh parsley chopped (for garnish)
Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, cooking for 3-4 minutes until softened. Stir in the garlic and cook for another 30 seconds.
Add the broth and chicken: Pour in the chicken broth and add the whole chicken breast along with the bay leaf, salt, pepper, and thyme. Bring to a gentle simmer.
Cook the chicken: Let the chicken simmer for about 20 minutes, until fully cooked and tender. Remove the chicken from the pot and shred it with two forks.
Cook the noodles: Add the egg noodles to the pot and let them cook for 6-8 minutes, or until tender.
Return the chicken: Add the shredded chicken back to the soup and stir to combine. Taste and adjust seasoning as needed.
