Easy and Satisfying Chicken Noodle Soup

Ingredients
  

  • 1 large chicken breast or 2 small
  • 4 cups low-sodium chicken broth
  • 1 cup egg noodles
  • 1 small onion diced
  • 1 carrot peeled and chopped
  • 1 celery stalk sliced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil or butter
  • 1 bay leaf
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme or 1 teaspoon fresh
  • 1 tablespoon fresh parsley chopped (for garnish)

Instructions
 

  • Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, cooking for 3-4 minutes until softened. Stir in the garlic and cook for another 30 seconds.
  • Add the broth and chicken: Pour in the chicken broth and add the whole chicken breast along with the bay leaf, salt, pepper, and thyme. Bring to a gentle simmer.
  • Cook the chicken: Let the chicken simmer for about 20 minutes, until fully cooked and tender. Remove the chicken from the pot and shred it with two forks.
  • Cook the noodles: Add the egg noodles to the pot and let them cook for 6-8 minutes, or until tender.
  • Return the chicken: Add the shredded chicken back to the soup and stir to combine. Taste and adjust seasoning as needed.
  • Serve and enjoy: Ladle the soup into bowls, garnish with fresh parsley, and enjoy warm!
