Heat the oil: In a large skillet, heat olive oil over medium heat until shimmering.
Cook the chicken: Add the chicken breasts to the pan and cook for 4-5 minutes per side until golden brown and crispy. Use a meat thermometer to check that the internal temperature reaches 165°F.
Rest and serve: Remove the chicken from the pan and let it rest for a couple of minutes. Slice and serve with a side of your choice.
