Ingredients
  

  • 2 boneless skinless chicken breasts
  • ½ cup freshly grated Parmesan cheese
  • ½ cup panko bread crumbs
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg beaten
  • 3 tablespoons olive oil

Instructions
 

  • Prepare the chicken: Place the chicken breasts between two pieces of plastic wrap and pound them to about ½ inch thickness.
  • Season the chicken: Sprinkle both sides of the chicken with salt, pepper, garlic powder, and paprika.
  • Set up the breading station: In one shallow bowl, add the beaten egg. In another bowl, mix the Parmesan cheese and panko breadcrumbs.
  • Coat the chicken: Dip each chicken breast into the egg mixture, ensuring it’s fully coated. Then, press it into the Parmesan-panko mixture, covering both sides evenly.
  • Let the coating set: Place the breaded chicken on a plate and let it sit for about 5 minutes to help the coating adhere.
  • Heat the oil: In a large skillet, heat olive oil over medium heat until shimmering.
  • Cook the chicken: Add the chicken breasts to the pan and cook for 4-5 minutes per side until golden brown and crispy. Use a meat thermometer to check that the internal temperature reaches 165°F.
  • Rest and serve: Remove the chicken from the pan and let it rest for a couple of minutes. Slice and serve with a side of your choice.
